Campisi Conserve Marzamemi

Linked to the sea for more than a century, Salvatore Campisi produces and processes a very wide range of seafood products, from Bluefin Tuna, Swordfish, and Amberjack to the highly prized botargo, mosciame (tuna ham) to the refining of the catch into pesto and pâté.
The use of ancient techniques, dating back to the Arab period, honed over time in the small village of Marzamemi, the drying and seasoning of tuna products, in a particularly suitable climate zone, has made Salvatore Campisi, worthy of being considered
one of the last connoisseurs of Traditions, ‘experience and care of a time, now dying out deserving of protection and recognition.
Campisi says, “Our goal is to continuously seek out those products that
have made the history of our land, we have put on the market the famous Garum Excellens, a condiment made from fresh local fish and spices used by the ancient Romans in the fifth century BC.
C and much sought after by connoisseurs of traditional cuisine.”
It should not be forgotten that Marzamemi is located in the municipality of Pachino: the Campisi company has in recent years also dedicated itself to the processing and transformation of vegetable products, first and foremost the Red Gold of Pachino, the “Pachino Tomato PGI,” known in the world
for its infinite sweetness.
One of the most successful products is the Tomato Sauce in the costoluto or cherry quality, Paolo Campisi assures “The processing has remained the same that the
locals have traditionally handed down for generations.
Genuineness, freshness of the raw material and strict controls guarantee the highest quality.”
